Restaurant Week Vibes: Cathy’s

    BASSETERRE, St. Kitts - AS I drove to Central Thibou Avenue, I noticed a peach building with a sign that read Cathy’s. I had heard of Cathy's Ribs on the Strip but I was pleasantly surprised when I entered the small Pick-up restaurant, because I knew if it were good, I would get my food quickly on the go.

    The first thing I noticed when I entered was the delicious smell. A line for silver trays hid behind a glass shield ready to be served. Cathy greeted me and told me she had just finished a delicious assortment of freshly cooked food. As she pulled a freshly squeezed juice I couldn't help but wonder what she had in store.

    She asked me what I would like on my plate. I instantly replied with Mutton and Oxtail because I could tell it would be delicious just by the smell alone. She went around back and piled a big helping of rice, macaroni pie and salad. A balanced meal. Customers went in and out with their order as I sat waiting for what was in store. She came back and carefully placed the Oxtail and Mutton on the side. Then she drizzled the stew juices all over the plate. My mouth was watering.

    I took my first bite of the tail and it melted in my mouth like butter. Savory, juicy and so tender! I then followed it up with a big scoop of rice that was cooked to perfection. Such a beautiful balance of flavours. The Macaroni Pie laid there as if to tell me to eat it. It had green beans, salt and pepper and it was so good I couldn't help but stop and eat the rest before continuing to the salad. The salad was so fresh I felt bad as to drench it with the fresh dressings she pulled out of the fridge. That is the place to get your meal for such a cheap price.

    I thought to myself…“if the food here is so good, I could only imagine the ribs on the Strip! Everyone knows of her Pork Ribs!” As I finish my last few bites, I quenched my thirst with two freshly squeezed juices. One was a dark orange juice made of the sweetest mangoes they could have found, and the other was passion fruit. I ended up mixing the two into a concoction of sweet and tangy silk. 

    I was in heaven!
