    TITLE: Chef De Partie 
     

    DEPARTMENT: FOOD & BEVERAGE
     

    REPORTS TO: Executive Chef/Sous Chef 
     

    JOB SUMMARY: We are looking for a professional Chef De Partie to be the second in command in our kitchen, following our Executive Chef/Sous Chef’s specifications and guidelines. The successful candidate will employ its culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers’ satisfaction.

     

    DUTIES & RESPONSIBILITIES
     

    •    Assist Executive chef/Sous Chef in planning and creating menus 
     

    •    To maintain cost percentage on par or below expected budget.
     

    •    To monitor all stock levels, initiate and implement measures to control these.
     

    •    To implement and enforce all operating and control procedures to ensure that movement of foods into and within the kitchen is properly accounted for. 
     

    •    To enforce internal control policy and procedures throughout the department, regarding purchasing, receiving and inventory control.
     

    •    To establish with the Executive Chef/Sous Chef, acceptable variances in cost and to explain variances beyond these acceptable levels to the General Manager.
     

    •    Plan staff levels and payroll costs in order to minimize cost whilst maintaining operational standards. 
     

    •    Enforce HACCP Sanitation Standards. 
     

    •    Cost menus and develop standard operating procedures for recipe booklets. 
     

    •    Maintain and ensure that a Five Star level of food preparation standard is adhere to for every work station. 
     

    •    Plan and manager menus for buffets and banquets

     

    QUALIFICATIONS/SKILLS
     

    •    3 to 5 years of experience as a Chef De Partie 
     

    •    Understanding of various cooking methods, ingredients, equipment and procedures
     

    •    Excellent record of kitchen and staff management
     

    •    Accuracy and speed in handling emergency situations and providing solutions
     

    •    Familiar with industry’s best practices
     

    •    Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
     

    •    BS degree in Culinary science or related certificate would be a plus


    ANY SPECIAL DEMAND: Must be proficient in English
