The amazing 7lb-potato

Rosita Eddy and her 7lb-sweet potato
By: Terresa McCall, SKNVibes.com

BASSETERRE, St. Kitts – STORIES have been told of odd things being found in backyard gardens and this one is just as astounding as any other.

Rosita Eddy of Southwell Alley, Sandy Point recently visited the offices of SKNVibes bearing a black plastic bag in which was contained a sweet potato. Sounds ordinary enough, but what is extraordinary about this vegetable is that is carries the weight of exactly seven pounds.

The self-employed food vendor explained that the whopper sweet potato was discovered when an individual was doing some gardening on a piece of land her family owns, which is located in the vicinity of her home.

“It has been a long time since I did some gardening. The land was just there empty and sometime last year a neighbour of mine cut some potato vines and he said he would make up some beds and planted the vines.

“So, on Tuesday he was doing some work on the land and while I was in the kitchen, he called out to me and when I went he showed me the potato and I asked him in shock what it was. He told me it was a potato and I couldn’t believe how big it was. I was glad to see it because I have never seen one that big.”

Eddy said the find has inspired her to do more gardening and she is encouraging others to recognise and experience the benefits which could be reaped from backyard gardening.

“If you have a little backyard, plants things in it because you never know what you would reap. I am encouraging everyone to do a bit of backyard gardening. Even if you feel that your yard is too small, you must find somewhere to put a little something, whether it is some herbs, season pepper, tea bush or something. This will save you some costs because the economy is bad all over and it would be good to grow a little something of your own.

“This seven pound potato has pushed me to do more with the land.”

    Where is the potato today?

It is no longer in her possession.

Because she understands the principle of Proverbs 3:9, Eddy presented the potato to a man of God.
