Plantation owners built windmills on their estates to process the cane. The cut sugar cane was brought to the mill by donkey or cart. The earliest mills were known as cattle mills and were powered by cattle, mules or oxen. Inside the mill, the cane was crushed in a series of large roller mills to extract the juice. The sweet juice was separated from the fibre.
