When the cane becomes mature, a growing point at the upper end of the stalk develops into a slender arrow bearing a tassel of tiny flowers.

After milling the cane juice flowed into large vats where it was clarified, skimmed, and then ladled into copper pots where the heated juice turned into a thick syrup.

Sugar cane takes approx. 14 – 18 months to mature. Once matured it is harvested by chopping down the stems and leaving the roots. The roots left behind would re- sprout and rapidly mature, allowing a second, and sometimes even a third harvest.

The many sugar plantations nestled across the island were key to the island’s commercial success in being able to export sugar to many regions.
